Jarrow Formulas® Extra Virgin Organic Coconut Oil from the fresh flesh of the coconut palm fruit, (Cocos nucifera) is unrefined and cold-pressed in a controlled, indoor environment. This specific process does not utilize any chemical solvents and preserves the volatile compounds responsible for imparting the rich, familiar flavor of coconuts. Coconut oil is a source of medium chain triglycerides (MCTs), such as lauric acid (C-12) and caprylic acid (C-8.)

Coconut oil is stable even during long periods of storage. Because its melting point is 75-76 degrees F, coconut oil can be used in both liquid or solid forms for cooking and baking.

Coconut oil is a member of the family of tropical oils, which also include palm, palm kernel, cocoa, and shea nut oils. These oils have been used for centuries in the traditional diets of people living in tropical regions such as the Polynesian islands. Because these populations experience less of the diseases, such as heart disease, that are common in Western countries, some people believe that tropical oils such as coconut oil, especially in their natural state, can be part of a healthful diet.1, 2 Currently, these oils are used in Western countries in small amounts, primarily in the production of processed foods.
