Moroccan Sweet Potato Soup with Spinach Recipe

INGREDIENTS
  • 3 medium to large sweet potatoes, baked, cooled and cut into large pieces
  • ½ cup plain Greek yogurt
  • ½ cup skim milk
  • 2 scoops GNC Pro Performance 100% Whey Protein (unflavored)
  • 1 ½ cups vegetable broth
  • ¼ tsp. ground ginger
  • ¼ tsp. cardamom
  • ½ tsp. turmeric
  • 1 tsp. coriander
  • 1 tsp. cumin
  • ¼ tsp. cayenne pepper
  • 3 cups finely shredded spinach leaves
DIRECTIONS

Combine sweet potatoes, yogurt, milk Whey Protein, vegetable broth and spices in large bowl and stir to combine. In blender or food processor, process mixture in small batches and place puree in a soup pot and heat over medium high heat until warmed through.
