Ingredients
• 1-9 in. ready-to-bake pie crust
• 3 large eggs
• 2/3 c. plain Greek yogurt
• 4 oz. feta cheese
• 5 oz. baby spinach
• 2 tbsp olive oil
• 1 tbsp Dijon mustard
• Ground pepper, to taste
Directions
1. Preheat oven to 400 degrees F.
2. Cook pie crust on its own for 10
minutes.
3. While crust is baking, mix eggs, yogurt,
and milk together. Gradually add feta
cheese.
4. Add ground pepper to taste.
5. Add spinach and olive oil to pan and
sauté until wilted.
6. Pull pie crust from oven; spread mustard
on crust followed by spinach.
7. Pour egg mixture over spinach.
8. Bake for 35 minutes. Enjoy!
